By appearance, the village of Shixia is no different than any other small villages on Guanzhong Plain, Northwest China. Nevertheless, by passing on traditional noodle making techniques invented by someone unknown 600 years ago, it is known as the hand-made noodles village far and wide.

It takes eight main procedures, including kneading, rolling, hanging and cutting, nearly 20 hours to hand make hollow noodles using the most traditional technique inherited by the village, which gives them a unique shape and taste.
